ode to radishes

freshly picked radishes on cutting board

radishes don’t get enough credit. they’re one of the easiest things to grow, they’re ready faster than almost anything else in the garden, and they add a little crunch and bite to just about anything. here’s why they deserve a spot in every garden, even a tiny one.

why they’re so easy to grow

  • they germinate fast, often within a week
  • they’re ready to harvest in as little as 3-4 weeks from planting, faster than nearly any other veggie
  • you don’t need much space—they’re perfect for containers, raised beds or gaps between other plants
  • they’re not picky about soil—it just needs to be loose enough for the roots to expand
  • they are cool weather lovers so they’re great for early spring or fall when other veggies are still getting started

how to eat them

  • sliced thin on bread with a little salt—simple and satisfying
  • roasted—they lose their bite and turn mellow and slightly sweet
  • pickled—they keep for weeks and add a punch to sandwiches and tacos
  • raw in salads for crunch and color—especially true if you plant an easter egg mix or watermelon radishes!
  • the greens—great sautéed with garlic or blended into a pesto

gardening tips

pull radishes as soon as they’re ready. radishes left in the ground too long turn woody and overly spicy fast, so check on them often once you’re in the harvest window.
